Sunlit Sovereign Rice Salad

Nourishment is not about restriction.
It is about remembrance.
Choosing, deliberately, what enters the body.
The Recipe

Ingredients
- Rice, white or brown, cooked and cooled (about 300g cooked, roughly 1½ cups)
- 2 tomatoes, chopped
- 1 orange, peeled and chopped
- ½ cucumber, chopped
- 1 red onion, quartered, sliced and chopped
- 1 avocado, sliced and chopped
- 1 handful of mixed nuts, or any nuts of your liking, roughly chopped
- 1 handful of raisins, or any dried berry or fruit
- Extra virgin olive oil, about 3 tablespoons
- Juice of 1 freshly squeezed lemon
- Maldon sea salt, to taste
- Freshly ground black pepper, to taste
Method
- Prepare the rice. Cook your rice, then spread it on a tray to cool quickly. Once it reaches room temperature, refrigerate it until you are ready to build the salad. Cooling is not just practical, it also creates resistant starch, which is kind to your gut.
- Soften the onion. Rest the chopped red onion in cold water for five minutes, then drain. This takes the harsh edge off while keeping its brightness.
- Build the base. In a large bowl, combine the cooled rice, tomatoes, orange, cucumber and onion.
- Add the richness. Fold in the nuts and raisins.
- Dress it. Drizzle over the olive oil and lemon juice. Season with Maldon salt and black pepper, then toss gently.
- Finish with the avocado. Add it last so it stays creamy and intact. Fold once or twice, no more.
- Serve. Taste and adjust. It may want another squeeze of lemon or a pinch more salt.

Serving Notes
- Best enjoyed the day it is made, and within 24 hours if stored. Keep it refrigerated, as cooked rice should be cooled promptly and not left out.
- For a warmer, more grounding version, use brown rice and lightly toast the nuts.
- Swap freely: dried cranberries, goji berries or chopped apricots for the raisins; walnuts, almonds or pumpkin seeds for the nuts.
- To keep it strictly gluten-free, check the labels on packaged nut mixes and dried fruit, as some are coated or processed alongside gluten-containing products.
Ingredient Breakdown
Rice (white or brown, cooked and cooled)
Body & mind: Cooked-and-cooled rice develops resistant starch, which feeds beneficial gut bacteria and supports steadier blood sugar. Brown rice adds fibre, magnesium and B vitamins, which support nervous system function and calm energy. Naturally gluten-free.
Vibrational: Grounding, sustaining and foundational, associated with the root chakra. Rice is a symbol of abundance and nourishment across many cultures. It anchors the soul in the physical realm.
Tomatoes
Body & mind: Rich in lycopene, an antioxidant linked to heart and skin health, plus vitamin C and potassium. Lycopene is absorbed better alongside the olive oil and avocado in this dish.
Vibrational: Red and sun-ripened, linked to vitality, passion and life force. Associated with the root and sacral energy centres, awakening warmth and embodied joy.
Orange
Body & mind: High in vitamin C, which supports immunity and collagen, and in flavonoids that support circulation. The natural sweetness and brightness also lift the mood.
Vibrational: Orange is the colour of the sacral chakra, tied to creativity, pleasure and emotional flow. It carries a joyful, uplifting frequency and helps release heaviness.
Cucumber
Body & mind: About 95% water, so it is hydrating and cooling. It provides vitamin K and silica, which support skin and connective tissue. Its gentle, light quality suits digestion.
Vibrational: Cooling, cleansing and calming. Associated with purification, softening tension and restoring emotional balance.
Red onion
Body & mind: Contains quercetin, an anti-inflammatory antioxidant, plus prebiotic fibre that nourishes gut bacteria. Red onions also hold anthocyanins, the pigments behind their colour.
Vibrational: Traditionally seen as protective and clearing, cutting through stagnant energy and layers of “inherited noise”. Layer by layer, it mirrors the process of remembrance.
Avocado
Body & mind: Monounsaturated fats support heart and brain health, and help the body absorb fat-soluble vitamins (A, D, E, K). Also provides potassium, folate and fibre. Its creamy richness is deeply satiating.
Vibrational: Green and heart-centred, connected to the heart chakra. Symbolises self-nourishment, love and abundance, and softens the whole dish with a sense of care.
Mixed nuts
Body & mind: Healthy fats, plant protein, magnesium, and, depending on the nuts, selenium (Brazil nuts), vitamin E (almonds) or omega-3s (walnuts). Linked to cognitive and heart health, and they add satisfying texture and crunch.
Vibrational: Each nut holds the concentrated potential of a whole tree, a symbol of stored wisdom, patience and latent power. Associated with grounding and inner resourcefulness.
Raisins (or dried berries and fruit)
Body & mind: Concentrated natural sweetness, with iron, potassium and polyphenols. They give quick, gentle energy and balance the acidity in the dish. Berries add extra anthocyanins for brain and eye support.
Vibrational: Sun-dried, so the sun’s energy is preserved and concentrated. Symbolises sweetness, joy and the reward of patience.
Extra virgin olive oil
Body & mind: Rich in oleic acid and polyphenols (notably oleocanthal), which have anti-inflammatory properties and support cardiovascular and brain health.
Vibrational: Long regarded as sacred, used for anointing and illumination in many traditions. Symbolises peace, wisdom, blessing and purity, and brings a golden, luminous quality to the dish.
Lemon juice (freshly squeezed)
Body & mind: Vitamin C and citrus flavonoids; aids digestion and iron absorption from the plant foods here. The acidity also keeps the avocado from browning.
Vibrational: Yellow, connected to the solar plexus (personal power, clarity, will). Cleansing, clarifying and awakening, it “brightens” both dish and spirit.
Maldon sea salt
Body & mind: Provides sodium and trace minerals, essential for nerve and muscle function and fluid balance. Its flaky texture means a little goes a long way in flavour, which supports mindful use. Enjoy in moderation.
Vibrational: Salt comes from the ocean, and sea salt is traditionally used for purification, protection and grounding. It represents the essence of the sea, cleansing and preserving what is pure.
Black pepper
Body & mind: Contains piperine, which stimulates digestion and can enhance the absorption of nutrients. It adds warmth and depth.
Vibrational: Fire and activation. Traditionally linked to protection and awakening, sharpening awareness and igniting the senses.
Taken together, this bowl is a small act of sovereignty: colour, minerals and light, chosen and combined on purpose.
The vibrational notes are a symbolic and traditional lens, offered as an invitation to eat with awareness. They are not a substitute for medical advice.
